One Pot Recipe


I'm still feeling overwhelmed by the goal of putting a home cooked meal on the table Sunday through Thursday. Matt does the morning routine with the boys, so I'm supposed to cook dinner. He's actually been doing it a lot more than I have, but I aim to get things back into balance. 

I still love our meal planning process in Excel, but I'm getting tired of our tried-and-trued recipes. I really need to add a new recipe each month to keep things interesting. 

I'm intrigued by the idea of one-pot recipes! I look forward to trying One Pot Zucchini Mushroom Pasta

Hi, Sarah! I'm doing a cooking with toddlers series this week that I thought you might enjoy. I've been very influenced by the Montessori approach to practical life, and I also really love being able to include my child when I'm cooking dinner after work.

I'd also recommend first, sauté some onions and garlic - it's such a good, versatile template and you can really make anything with it.

I completely feel the same way you do about being overwhelmed trying to get home-cooked meals on the table each week. Do you have a slow cooker? My friend and I got together a few weekends ago and made 60+ crockpot freezer meals in 4 hours. It was really easy, the recipes incorporate "clean" food and all I have to do in the morning is remember to toss whatever is in the bag into the crock pot and maybe make some pasta/rice as needed for serving. Just a thought!

I just wanted to share something that I discovered a few months ago. https://realplans.com/ These guys have seriously revolutionized my life! I do the traditional diet, but I know they have a vegetarian plan. It makes my life so much easier. All of the meals are so yummy and usually pretty simple. I usually just pick a few recipes that sound good and easy for the week, double the recipes, and then only cook every other night. There is also printable shopping list, which makes my weekly grocery shopping runs much easier as well.

We've used Emeals.com for the past 6 years. It has enhanced our dinners, wallet, marriage, lives. Amazing how a simple meal planning service can be so instrumental!

FYI...the recipe is fairly bland. Be sure to add some yummy spices!
