Potluck Brainstorm
I'm going to a potluck tomorrow, and I'm at a loss for what I should bring. I really want to bring something unhealthy, like cupcakes. I have such a sweet tooth! My default is always to bring something unhealthy. I want to get out of that habit! (Oh, man, I could even make cupcakes in a jar! How perfect would that be for a picnic potluck?!?)
Hmm...maybe I could bring fruit kabobs. Or I could do a whole wheat pasta with tomatoes, basil, mozzarella, and balsamic vinegar.
Maybe I could bring something healthy and bring the cupcakes (but not eat them)? Okay, who am I kidding, that would never work. Not only would I eat them at the potluck, I would also eat the batter and then eat them when the first came out of the oven. I really have no self-control when it comes to sweets.

I always end up taking salsa and chips - easy to make, not unhealthy, and nobody else thinks of it. Throw in some mango to make it summery and call it a day.
Bring some macerated fruit. In that way you will have the best of both worlds :)
I usually make taco dip - cream cheese and salsa with cheddar cheese on top. I made brownies this time though - and I don't even know if I will eat any of them!
Fruit pizza is good. It has the not so healthy cookie crust, with the healthy fruit on top.

I have found that I crave sweets less the more protein I'm getting so that may be something to look into.
More importantly, I made this salad the other day but used quinoa instead of orzo and cut the amount of cheese in half. It was really summery and yummy and very healthy with lots of protein and fiber. Depending on how many people are going, I would probably double the recipe... And I didn't make it in the ball jars because we just had it for dinner, but dang would it be cute.

whole wheat rotini pasta
2 containers TexaFrance sundried tomato pesto (I miss HEB and central market so much!)
kalamta olives
feta cheese
Sunset magazine also had a yummy Creamy Lime Coleslaw recipe made with nonfat greek yogurt that I made for the 4th that was good!

The last one I made I added sundried tomatoes, feta, vidalia onions (pre cooked) and green onions. They were amazing (excecpt that I left the oven on too long for the second batch and burnt them).
I should find you this recipe I made from the Passionate Vegetarian. It's a quinoa buckweat salad with an asian dressing and fresh sweet corn and I want to make it all summer long. Easy to make and delicious.
